It's like what you expected ragdoll kung-fu would be, before you dropped 20 dollars and were really dissapointed.
You can extend, contract, relax, or hold a certain muscle.

Through that you're allowed to kick ass. You pick which muscles inbetween turns. Each games are set for a certain number of frames. The standard servers are 120 frames, and each turn runs 10 frames. Those matches usually end based on points, as you're able to endless dodge your opponent since you always know what he's doing. The singleplayer mode plays more like a practice session, you could "possibly" play a hotseat game, with it. But it requires you to select a character, and you'd see what your opponent is planning.
The Judo servers are 1000 frames and have 70 frame turns. I like these servers because they usually end with a disqualification. A DQ occurs when anything but your hands or feet touches the ground, this includes severed limbs, which is entirely queer.
The combat allows for many cool moves, I'm currently prefecting my spinkick. You can also grab on to an opponent by clicking your hands, that's where the judo servers really shine.
