Lamb Loin Chops and Spencer steak with brandy shitake gravy

4 Lamb Loin Chops
1 14oz Spencer steak
1/2 lb Shitake Mushrooms
Brandy
Rosemary
Thyme
Garlic
Garlic Powder
Onion powder
Black peppee
Few tablespoons olive oil

At least 2 hours ahead, marinate chops in the seasonings and a bit of oil

1, sear mushrooms in butter until crispy, set aside
2, sear steak 3 min per side, set to rest 10 min
3, 2 tbsp oil in pan, sear Lamb 2 - 3 min each side, set to rest
4, add 1 cup leftover chuck roast gravy from last week
5. Add 1/2 cup brandy, cook down until you dont smell the alcohol burning off

Serve with side of broccoli and leftover rice and gravy from the last chuck roast dinner.

Love the magic of leftovers: 1 chuck roast = 5 1/2 dinners + a lunch
