I made this for the first time tonight, and everyone agreed it was the best one they ever had.



Two nights in a row, I got complimented on my cooking by my wife, which brings the total for the 2020 decade to two.

I am killing it in the kitchen. AMA.

Is there any chance she lost her sense of taste due to the COVID-19 pandemic, and is just getting it back?

Is there a RECIPE you think we should use for similar pie?

Part of me wants to post two of your recipes a month in 2023 to Caltrops and just suddenly shift it, outwardly, to a cooking site.

Ben's Famous Shepherds Pie. Lifted almost entirely from here. But I remove the cheese because cheese belongs nowhere near this, and I tweaked some amounts.

INGREDIMENTS
=============
2 tbsp olive oil
1 lb lean ground beef or lamb (technically, it has to be lamb to be a shepherds pie, but fuck it)
Half an onion, finely diced
Three cloves garlic, minced
2 tsp dried parsley
1 tsp dried thyme
1 tsp dried rosemary
(Modify herbs based on whatever you like and have on hand)
1.5 tbsp Worcestershire
2 tbsp tomato paste
2 tbsp flour
1 cup beef broth
1/2 cup each: frozen corn, frozen peas, frozen chopped carrots. Replace with fresh if you want, losers.
Salt/pepper
Mashed potatoes (I can do a separate recipe, but come on, you know how to make mashed potatoes, DON'T YOU?!!

DIRECTIONS

Preheat oven to 400

1. In a big skillet, over medium high, saute the onion in the olive oil until soft, with some salt and pepper
2. Add beef/lamb, stir and break up until fully cooked, with some salt and pepper
3. Add garlic and herbs, stir for 30 seconds
4. Add tomato paste and Worcestershire, stir to combine, 1 minute.
5. Add flour, stir to incorporate, 1 minute.
6. Stir in the broth, bring to simmer.
7. Add corn/peas/carrots, stir in and let simmer until you like the consistency. Should be fairly thick. Taste all the while and add salt/pepper/more Worcestershire to your liking.
8. Dump it all into a 9x9 casserole or baking dish, or whatever you happen to have that'll hold it. Spread evenly.
9. Spread mashed potatoes evenly in a layer on top.
10. Bake 20-30 minutes until it's bubblin' and the top is starting to brown.
11. Remove from oven, cover, let sit 10 minutes.

There ya go.

Why is it that every one of your recipe names start with "Ben's Famous" when none of them were known by anyone but you (and possibly Kathy) before you posted them here and even now, is only additionally known only by, at most, the 11 or so regular members of this BBS, Mr. Parrish?

It is not the first word of the names of any of these recipes that concerns me; the one privilege the inventor or discoverer of something has the right to do is name their invention or discovery, including, if they be so inclined, to name it after themeselves. What I am concerned with is the second word of the name of these comestibles.

You, sir, apparently have an extremely liberal definition of "famous," possibly to the point of being so broad as to render the word meaningless.

Now, I'm not challenging. Just asking.

The elimination of cheese. Is it just because the dish is rich enough without it?

It's because I prefer the traditional dish. Only fatty fat Americans started adding cheese to things, cuz they are fat fatties.

My bad take:

I can't really get into Shepard's Pie. I want to like but eh.. I had a friend make it and bring it to DnD night and it had lamb meat in it so I passed (lamb is just about the only meat I don't care for) and then he made it again with ground beef and I thought it "okay" but not really something I'd make for myself. Too "plain" for me I guess? I'm not really sure. Then again I really like Moravian chicken pie with.. nothing but chicken in it lol

Sadly, the night after this, I made a recipe she send to me from the NY Times for a "white bean turmeric soup", and it was the worst thing any of us had had in a year, so the streak was broken. I blame the NY Times, but I mainly blame her.
