The last step is the first one: Drain and with paper towels extract as much water from the crab as possible. Nobody likes watery goddamn crab cakes.

Ingredient list:

1 pound lump crab
1.5 tbsp Old Bay
1 tbsp mayonnaise
1.5 tsp dijon mustard
1.5 tsp worcestershire sauce
two slices white bread, crust discarded, torn into little bits
1 egg

Instructions:

Mix gently until all ingredients are incorporated. Form into patties.

Let rest for an hour

Fry in olive oil until each side forms a golden brown crust.

I'll try it this weekend, though Pinback heavily discouraged me from using imitation crab for various (good) reasons. But as the budget is kinda tight, do not believe I'll have a choice - guess I'll check out what is on sale at my local Asian Market.
