Not much, because throughout their journey, they are (other than their decisionmaking, which could use some reigning in) the most "together" people in the movie. The stoning is basically only a catalyst to make them want White Castles. And besides, through most of the movie, they are OUT of weed, and thus are not stoned.
3) How much due to the fact that they are not white?
Occasionally. A few Apu jokes for the Indian guy, and a "Better Luck Tomorrow" joke for the Asian guy, which I'm not sure too many people are going to catch.
