I make my wife grilled cheese sandwiches (while heating up TOMATO SOUP OMG) the following way. Since it's the only way I make them, I will submit this recipe:
Two slices of sourdough bread
1.5 slices of American cheese, or enough to completely cover the bread.
Olive oil.
Panini press.
Place cheese between bread. Brush one side with olive oil. Place oiled side down into panini press. Brush other side with olive oil. Press until done.
I've used "real" cheese too, but American is the correct choice.
