Learned this from YouTube videos. A very simple, but very popular and traditional "poor people" dish from Jamaica, called "Dutty Gal". Essentially it's mackerel in tomato sauce stewed quickly with various veggies.
Now, this is a simple, cheap, easy-ass dish to make, but you must have this exact item stocked in your grocery store, in the "canned meat/fish" aisle:
Now, my local Publix here in Murfreesboro, TN carries it (4 for $5!) so I'd imagine your local groceria does as well. If you ever go to grocery stores, please look for it, if only to report to me how common/uncommon it is. It's all over the place here.
(Serves 1.)
INGREDIENTS

1 5.5oz can Grace-brand mackerel in tomato sauce (see above)
1 tbsp oil
1-2 chopped cloves garlic
1/4 cup sliced onions
1/4 cup diced peppers (most traditional is scotch bonnet, but you can substitute jalapenos, or if you don't like spicy, some sort of bell pepper or whatever -- yellow bell pepper is what was used in the picture I took up there.)
1/4 cup diced tomatoes
1/4 cup sliced green onions
1/2 tsp thyme (optional)
S/P to taste
1. Heat oil over medium-high.
2. Throw in everything but the can and the S/P.
3. Saute 3-4 minutes until veggies are softened.
4. Throw in contents of can.
5. Rinse out can with a couple tbsp of water, then add to pan.
6. Add S/P to taste.
7. Stir gently and let simmer until slightly thickened, 5 minutes or so.
Serve with rice (pictured) or whatever the hell else you want.
Congrats, now you're eating like a poor Jamaican child!
