[RECIPE] Ben's Famous Lemon Garlic Shrimp Pasta

Post by pinback »

This has become a family favorite, we're averaging once a week. The family loves it because it tastes amazing, and I love it because it's easy and I can cheat and not use any real ingredients, opting instead for dried herbs and fake cheese. Amazing!

Many amounts are guesses, because I don't measure anything, I just dump stuff in there until I like it, as indicated by question marks next to an ingredient. Which is the correct way to cook anything, so this is a good training exercise.

INGREDIENTS
===========
8 oz thin spaghetti
1 lb large shrimp*
2 tbsp olive oil
2 tbsp + 4 tbsp butter
1 tbsp dried parsley flakes?
1 tsp garlic powder?
1 tsp Old Bay?
.5 tsp red pepper flakes?
1/4 cup grated/jarred parmesan cheese?
2 tbsp lemon juice?
Salt

DIRECTIONS
==========
1. Cook spaghetti, drain.
2. Wipe pot clean, and in same pot, melt 2 tbsp of butter with the 2 tbsp olive oil.
3. Add shrimp, garlic powder, parsley, Old Bay, pepper flakes, and some salt?
4. Saute shrimp until just cooked.
5. Add cooked pasta to pot.
6. Add remaining 4 tbsp butter, lemon juice, and cheese.
7. Mix together until blended and butter and cheese are melted.
8. Taste and add more of everything until it's the best thing you ever ate.

* I prefer the "easy-peel" frozen variety. You thaw it out, and darned if it ain't easy to peel.

That's actually really close to the way I make shrimp scampi!

For that I use half a stick of butter, 4 tablespoons olive oil, 3 cloves minced garlic, little salt, liberal black and red pepper. 1 cup of white wine (reduced for about 5 minutes). Parsley at the end. I don't keep lemons or even lemon juice around like I should though and just throw in some "lemon pepper salt". I also have to keep the pots separate or my GF will complain lol

Sounds great. I figure you put a bunch of shrimp and pasta and butter in a pot, it's gonna be good no matter what happens.
