Don't use lentils that got a lot of DDT in the 80s and the effects last to this very day.

Pinner, I have some Green Chiles laying around and wanted to try this recipe! I was curious about how a few alterations may adjust the taste?

1. Using Chicken Broth.
2. Slightly caramelized onions.
3. Gee instead of Olive Oil.
4. Minced bell peppers.
5. Lentils instead of potatoes.

I'm not vegetarian, but when I'm allowed to choose/cook my own meal, I generally go that way.

You can add chicken, but I just wanted a nice light veggie-based green chile stew.

Here's the chicken version: Do the same thing but add chicken. Boom.

Vegetarian Green Chile & Potato Stew

For self-reference. This came out pretty perfect, so I'll want to do it again.

INGREDIENTS
-----------------
2 tbsp olive oil
1 diced white onion
6 cloves minced garlic
2 cups (16 oz) Hatch green chiles
1/4 cup (4 tbsp) flour
32 oz vegetable broth
1/2 tbsp cumin
1/2 tbsp dried oregano
1.5 pounds (or so?) diced potato
Salt/pepper

DIRECTIONS
==========
- Heat olive oil over medium-high, add onions, season with S/P, saute 5 minutes or so until onions are soft.
- Add garlic, saute another 30 seconds
- Add chiles and flour, stir for 3-5 minutes until incorporated and flour is slightly toasted.
- Add broth, cumin, oregano, bring to boil.
- Reduce to simmer, add potatoes.
- Simmer, covered, 20-30 minutes until potatoes are tender.
- Season to taste.

Good stuff.
