[RECIPE] Ben's Famous Creole Seafood Stew

by pinback » Sun May 29, 2016 5:15 pm

Writing this here because I semi-made it up, and it was the best thing I ever ate, so I wanna remember what I did:

- 1 lb shrimp
- 1.5 lb random fish, one-inch dice
- 8 oz lump crab
- 8 oz frozen cut okra
- 1 can chicken broth
- 1 can diced tomaters
- 1 8oz bottle clam juice
- 2 tbsp flour
- 4 tbsp butter
- 1 white onion, diced
- 1 bulb fennel, diced
- 1 green pepper, diced
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1.5 tbsp Luzanne-brand Creole seasoning
- Few dashes of Crystal hot sauce
- 1/2 cup+ chopped parsely
- S&P

= Melt butter over medium high, add flour, stir for a couple minutes to make a light roux.

= Add onion, fennel, bell pepper, garlic, season with S&P and stir to blend with the flour for a few minutes.

= Add chx broth, tomatoes, clam juice, thyme & Creole seasoning, bring to boil, simmer for 45 minutes or whatever

= Add okra, bring back to simmer for 5-10 more minutes

= Add shrimp, fish, crab & parsley, bring back to simmer, stir for a few minutes until everything's cooked.

Serve with white rice, garnish with more of the parsley.

Good god damn, best thing I ever ate.
